The Doctor Chef Raimondo Mendolia is in Genoa, at the Fresh Pasta Academy, for a course dedicated to those who want to become Mastro Pastaio. From 13th to July 17th 2015 Mendolia, international expert on pasta, gastronomy and applied microbiology, holds a four days full immersion Mastro Pastaio course.
The Academy has three classrooms with professional equipment and a kitchen where students can learn the proper production techniques studying both theory and practice in order to obtain a professional certificate.
